Brussels Sprout and Purple Cabbage Stir-Fry

I love improvising in the kitchen and throwing things together in a pan to see what happens. Sometimes it doesn’t work out very well, but this time it did! One of the best things I’ve made in a while. Justin has been saving the bacon fat from cooking our breakfasts and I used that to sauté the shallots and garlic. Lard is a stable fat that doesn’t burn when cooking at high temperatures, don’t be afraid to use it 👍.

Ok, then I browned some spicy Italian sausage in with the shallots and garlic. While that was cooking, I roughly chopped about half a red cabbage and some Brussels sprouts. I sautéed the cabbage and Brussels sprouts separately because my pan wasn’t big enough to cook them all at the same time. I added a little salt and pepper, and paprika to taste while sautéing. After they were tender, and the Brussels sprouts a little browned, I mixed everything together with the sausage and voila!! #husbandapproved✔️#dontbeafraidoffat

Low(ish) Carb Spaghetti Bolognese From Scratch

Spaghetti Bolognese with yellow squash noodles and a side of roasted purple cabbage.

For the sauce I blended two large organic Roma tomatoes, two big handfuls of arugula, and about a cup and a half of sun-dried tomatoes in olive oil. Added dried basil and oregano to taste. Before blending though, I was sautéing one sweet yellow onion and one garlic clove with 1.5 large shredded carrots for some added sweetness, salt and pepper to taste. Brown 1lb of grass fed ground beef and add to onions, garlic and shredded carrots. Continue to cook so the flavors can meld together (about 5ish mins). Add blended tomato mixture and let simmer for 20 mins (or more if you’d like to really enhance all the flavors) occasionally tasting to see if it needs more salt or herbs. Spiralize a couple of zucchini, I used yellow squash this time but both work great. Sauté the noodles a bit to get some of the moisture out but still keeping some of the crunch. Add it all together and enjoy!
